Menus (With Ingredients)

The menus for the weekend will consist of mostly vegetarian dishes (largely ovo-lacto, not vegan; we will have luncheon meats for sandwiches and a few of the pizzas on Friday night may have meat). We have tried to anticipate food allergies and restrictions in menu planning. We are buying some commercially prepared items -- i.e., breads, muffins, chips, dressings, salsas, dips, etc. -- that may contain ingredients we are uncertain of. Check with the various food czars if you have serious allergies. Don't assume that all items on the menu are safe for you. If these menus do not address your specific food need, let us know and we'll make an effort to accommodate you. Be sure that your team's squire reports your food restrictions to the Invitation Czar, Karin Howe.

Breakfast (Czars: Kate Henson and Aaron Marcus)
- Scrambled eggs (eggs, milk, butter, cheese, salt & pepper)
- with veggies (onions, mushrooms, bell peppers, garlic)
- without veggies
- Breakfast potatoes (spuds, salt, butter, vegetable oil, maybe onions)
- Toast (alternative grain breads available)
- Fresh fruit
- Various muffins or coffee cake
- Breakfast cereal
- Coffee, tea, cocoa, herb teas, orange juice
Lunch (Czars: Pete and Julia Schult)
- Quinoa Tabouli (tomatoes, water, cucumber, carrots, quinoa, olive oil, lemon juice, green onions, parsley, salt, sea salt)
- Waldorf salad (apples, grapes, yogurt, celery, walnuts, sugar, lemon rind, lemon juice)
- Spicy black bean and corn salad (black beans, corn, tomato, chilis chipotles, olive oil, wine vinegar or lime juice, red onion, green onion, cilantro, cumin, sugar, salt, black pepper)
- Garbanzo bean salad (garbanzos, pinto beans, red beans, celery, cucumbers, radishes, salad oil, green onions, black olives, vinegar, onion juice, salt, mustard, paprika, black pepper)
- Sandwich fixin's (cold cuts, cheeses, various condiments as appropriate, peanut butter and jelly, alternative grain breads available)
- Fresh fruit
- Various homemade cookies
- Sodas, beer, water, juices

Dinner (Czars: Susan Galbraith and Dan Clark)
- Burritos (assembled by the diners themselves and can, but need not, contain any or all of the following ingredients: corn tortillas, flour tortillas, vegetarian refried beans, salsa, sour cream, black olives, green olives, tomatos, cheese, lettuce, sweet onion, red or green peppers, jalapeno, alfalfa sprouts (or similar))
- Guacamole (avocado, chile or chipotle pepper (or both), coriander, cumin, onion, garlic, salt, lime juice)
- Saag (purchased from an Ithaca Indian restaurant and made with spinach and potato and lots of spices. It is not made with ghee. We don't know what else is in it.)
- Fruit salad (whatever fresh fruit looks good at the time, probably including the following: strawberries, bananas, melon, apples, pears, grapes, kiwis)
- Brownies (store-bought brownie mix -- i.e., chocolate, flour, sugar, oil, milk, eggs)
- As the Hounds are celebrating their 20th year, there will be a birthday cake and homemade gelato and/or ice cream. The cake will be commercially-made. If part of it is chocolate, part will be some non-chocolate flavor yet to be determined. No decision has been made about the flavor(s) of gelato and/or ice cream.
